Risotto for One

Risotto is a classic Italian dish that is typically made with rice, broth, and vegetables. It is a versatile dish that can be customized to your liking, and it is perfect for a quick and easy weeknight meal. This recipe makes enough for one person, but it can easily be doubled or tripled to feed a larger crowd.

Ingredients

  • 1 cup of arborio rice
  • 1/2 cup of dry white wine
  • 1/2 cup of chicken broth
  • 1/4 cup of grated Parmesan cheese
  • 1 tablespoon of olive oil
  • 1/2 yellow onion, diced
  • 1 garlic clove, minced
  • Salt and pepper to taste

  1. In a medium saucepan, heat the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
  2. Add the rice to the saucepan and stir to coat in the oil. Cook for 1 minute, or until the rice is opaque.
  3. Add the white wine to the saucepan and stir. Bring to a boil, then reduce heat to low and simmer for 5 minutes, or until the wine has been absorbed.
  4. Add 1/2 cup of chicken broth to the saucepan and stir. Bring to a boil, then reduce heat to low and simmer for 10 minutes, or until the broth has been absorbed.
  5. Continue adding the chicken broth 1/2 cup at a time, stirring after each addition. The risotto should be cooked al dente, which means it should still have a slight bite to it. This will take about 20 minutes total.
  6. Once the risotto is cooked, remove it from the heat and stir in the Parmesan cheese. Season with salt and pepper to taste.
  7. Serve immediately.

  • To make the risotto ahead of time, cook it according to the directions and then let it cool completely. Store the risotto in an airtight container in the refrigerator for up to 3 days. To reheat, simply reheat the risotto in a saucepan over low heat until warmed through.
  • If you don't have any chicken broth on hand, you can use vegetable broth or water instead. Just be sure to season the risotto with salt and pepper to taste.
  • You can also add other vegetables to the risotto, such as peas, carrots, or mushrooms. Just be sure to cook the vegetables until they are tender before adding them to the risotto.
  • If you want to make a richer risotto, you can add some butter or cream to the dish. Just be sure to do this at the end of cooking, so that the butter or cream doesn't curdle.
